DON’T FORGET THE WEDDING CAKE!

 

A wedding without a cake is akin to offering a lackluster fruit platter and cookies. Throughout my tenure as a Wedding Planner, I have had the privilege of savoring numerous wedding cakes. I hold deep admiration for the skilled artisans who expertly craft visually stunning and delectable confections. I am delighted to introduce a standout figure in this realm, Deborah Lauren from CITY SWEETS & CONFECTIONS. Deborah's unwavering talent and commitment never cease to impress me, as her creations consistently evoke admiration. In a recent meeting with Deborah, we delved into the intricacies of selecting your ideal wedding cake, spanning flavors, designs, and accommodating special requests to curate a striking and flavorsome centerpiece for your special day. Deborah, with your extensive experience in the industry, how have cakes evolved over the past decade?

DEBORAH LAUREN:I see a lot more modern design and different materials besides fondant and gum paste being used in really creative and unusual ways.”

What flavors and fillings do you enjoy the most?

DEBORAH LAUREN: “I love lemon cake with passionfruit cremé, cardamom with lemon chiffon filling or vanilla bean mascarpone orange cake with chocolate truffle ganache”

What advice can you offer to a couple currently in the process of choosing a wedding cake?

DEBORAH LAUREN: “Be prepared. Bring your designs, colors, mood board, etc. to your cake appointment. Also, pics of cakes you like can help your cake artist create the cake of your dreams.”

In recent times, many brides are opting out of the traditional wedding cake trend. What do you think about this shift in wedding traditions?

DEBORAH LAUREN: “Really?  I think the guests are disappointed. It's such an integral part of the wedding that people expect to see.”

Do you have any tips on saving money when it comes to wedding cakes?

DEBORAH LAUREN: “If you're having a very large wedding you can have your cake person make your cake for less guests and have sheet cake in the kitchen to make up the difference.”

Finally, how do you manage special requests such as gluten-free, vegan, and nut allergies?

DEBORAH LAUREN: If it’s a gluten-free cake, we use a special blend of flours that makes a really nice cake and if it’s allergy related, I clear out the entire studio of nuts, put it in plastic bins and wash out the oven a couple of times just to make sure there are no remnants of anything that can make someone sick. My niece is severely allergic to peanuts and tree nuts so I’m kind of used to it.”
